This morning I baked a breakfast I have been wanting to try for awhile. Baked avocado with an egg in the middle. It was pretty tasty!
First, spray your cupcake pan. I thinly sliced an avocado and line the inside of my cupcake tin.
Next I cracked an egg into the tin.
Sprinkle the eggs with salt and pepper then put them in the oven. I baked them at 425° for 15 minutes.
When they were done, I put the in a bowl on top of a mixture of salsa and sour cream. Delicious!
